Growing up in the Bible Belt, if you were like me, you went to church every Sunday. We heard the Word of God preached but we also gathered together often. One thing that happens in churches in the South is you eat a lot. Anytime there is any special occasion, southern churches find a reason to eat. 

After the service, tables will be lined with casserole dishes and all sorts of potluck. Once Memorial Day rolled around, the classic pasta salad would come out at the church potluck dinners. One thing my mom would always bring was a variation on a delicious pasta salad called Spaghetti Pasta Salad.

What is Spaghetti Pasta Salad?

Spaghetti pasta salad is a cold pasta salad that is full of fresh veggies, Parmesan Cheese, and a zesty dressing mix that is to die for. One of the key ingredients in this dish is Salad Supreme Seasoning.

If you are accustomed to Classic pasta salad, this is vastly different but similar all at the same time. As with most pasta salad recipes, this is an easy pasta salad recipe to make.

Why I Like This Cold Pasta Salad

The crisp cucumbers and the burst of sweetness from the cherry tomatoes along with the garlicky notes in the Italian dressing are the ingredients that marries all the flavors together.

Spaghetti Pasta Salad is perfect year-round, but once Memorial Day rolls around is really when this dish shines. This dish is a great side dish to bring to that summertime cookout or BBQ. Bring this side dish and there is no doubt it will be a huge hit with everyone there. 

What You Need to Make Spaghetti Pasta Salad

Spaghetti noodles

I like to use thin spaghetti noodles or Angel Hair Noodles.

Bell Peppers

I like to use red bell pepper and yellow bell pepper for that pop of color and extra sweetness

A Small Red Onion

Red onion brings a sharp biting note. You can soak the red onion in cold water for a few minutes to mellow it out slightly if you don’t prefer that flavor as much. 

Black Olives

Black olives offer a slightly salty flavor and are quite mild in taste. They also offer a texture that is between the tenderness of the noodles and the crispness of the veggies. 

Cucumber

I prefer garden fresh cucumbers for this dish. I like to peel them as they take away the bitterness and leave the crisp sweetness of the cucumber. To me, the cucumber is the star of this dish.

Zucchini

Once you get into Summertime, you are always looking for ways to use up summer squash. This is a great way to add in some extra texture and use up that bumper crop of summer squash

Salad Dressing

Salad Supreme Seasoning

This is a seasoning made by McCormick Seasoning Company. This is what makes this dish different from other cold pasta salad recipes

Italian Dressing

You can make your Italian dressing or use a good, high-quality store-bought one. The zesty garlic notes of Italian dressing complement the sweet notes of the cucumber and cherry tomatoes. 

Parmesan Cheese

What is pasta salad without some type of cheese right? Parmesan gives this dish a creamy texture that is slightly fruity but nutty as well. Parmesan cheese is the main ingredient in dishes such as risottos and Alfredo sauce. 

How To Make Spaghetti Pasta Salad

Step 1: Cook the pasta according to the package directions. After the noodles are al dente (Almost Done) drain, then rinse the spaghetti noodles with cold water.

Step 2: In a large mixing bowl, add the pasta, Bell Pepper, Red onion, Cherry Tomatoes, Zucchini, Black Olives, and Cucumbers. Mix veggies well with the pasta.

Step 3: In another small bowl, add the Italian dressing, Salad Supreme Seasoning, and Parmesan cheese. Whisk ingredients together until well combined.

Step 4: Pour the contents of the dressing onto the Spaghetti and veggies. Toss all the ingredients together until the dressing has thoroughly coated the noodles and veggies.

Step 5: Cover the large bowl of Spaghetti Pasta Salad and place it in the refrigerator to chill for at least 2 hours. Once the Pasta salad has chilled, remove it from the refrigerator and sprinkle it with the remaining parmesan cheese before serving.

Yes, you can use English Cucumbers. You can leave the peeling on with English Cucumbers as they tend to not be bitter. 

Can I Use Homemade Italian Dressing?

Yes, you can use Homemade Italian Dressing. If you have time to make it, I prefer it to store-bought. But if you don’t have time to make it, don’t sweat it, just use a high-quality store-bought brand. 

How Can I Store It?

Store the leftover spaghetti Pasta Salad in an airtight container or cover a bowl with plastic wrap for up to 3 days in your refrigerator. Some say it is even better the next day!

Does this dish go by other names?

Some people call this dish California Spaghetti Salad.

Can I Substitue Vegtables?

Yes, if you don’t have the color bell peppers listed you can use any of the ones that you have. The choices are red bell pepper, Green bell pepper, Yellow bell pepper, Orange Bell Pepper, etc. If you don’t have cherry tomatoes, you can use grape tomatoes. Most of the veggies are interchangeable with other fresh vegetables. Feel free to make the Spaghetti Pasta Salad on your own by mixing and matching ingredients.

Can I Add in Any Herbs?

Yes. If I were adding in any herbs, I would recommend adding in some fresh parsley, Dill Weed, Green onions, or even some cilantro.

Ingredients

  • 1 box thin or angel hair spaghetti noodles
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small red onion, thinly sliced1
  • 1 small can black olives
  • 1 cucumber
  • 1 zuchinni
  • 1 pint cherry tomatoes

Dressing

  • 1 16oz bottle Italian Dressing
  • 1/3 cup parmesan cheese
  • 2 tablespoons parmesan cheese, use this to sprinkle on top before serving.
  • 2 1/2 teaspoons McCormick Salad Supreme Seasoning

Instructions

After you have taken the Spaghetti Pasta Salad out of the refrigerator and before you serve it. Sprinkle a little extra parmesan cheese on top.
