Fried Squash Fritters
Yellow Squash is a staple in many southern gardens. As summertime moves on, it is hard to find other ways to prepare it that you have not already tried or done. This is a spin on one of my favorite ways to have squash, fried. Try these Fried Squash Fritters and see if you don’t love them too.

Ingredients
Instructions
  1. In a large bowl, combine grated yellow squash, chopped onion, beaten egg, salt, and pepper.
  2. Mix well
  3. Stir in flour.
  4. In a large skillet or frying pan, add in 1/2 inch of vegetable or canola oil and heat on medium to medium-high heat.
  5. Using a tablespoon or an ice cream scooper, drop batter into the hot oil.
  6. Cook time will be about 3 minutes per side or until they are golden brown.
  7. Drain the patties on a paper towel or a draining rack once done.
  8. Now they are ready to eat! Serve them with a side of ranch dressing to dip them in.
