Maple Pancake Cupcakes

My daughter had this idea a few weeks ago to make pancake batter and put it in a cupcake wrapper. I honestly thought it was genius so I said how about we add a Maple Cream Cheese icing on top? This is how we ended up with Maple Pancake Cupcakes.

That is how the Maple Pancake Cupcakes was born. Morgan wanted to make it all on her own so I let her make the video for my channel and a new Southern Food Junkie was born.

Moreover, I thought this was going to taste really good but I was really taken aback by just how good these Maple Pancake Cupcakes really are. In order to taste one for the camera, we didn’t want to wait till it cooled off completely so we put the icing on it still warm and I am telling you it was a match made in Heaven!

The icing was so creamy and buttery tasting with sweet back notes of the Maple Syrup kicking in. You got to try these Maple Pancake Cupcakes!

Maple Pancake Cupcakes

Ingredients

Pancake Batter

  • 1 1/2 cups self rising flour
  • 3 tablespoons melted butter
  • 1 1/4 cup Milk

Maple Cream Cheese Icing

  • 1 8oz package of softened cream cheese
  • 4 oz pure maple syrup
  • 1 cup confectioners Sugar
  • 4 tablespoons melted butter

Instructions

Pancake Batter

  1. Pre-heat oven to 350 degrees F.
  2. Start with your wet ingredients first. Add in your milk and egg and then beat them together. Wait on the butter till the end.
  3. Next, add in your flour and sugar and combine.
  4. Next, add in the butter and mix together.
  5. Grab a cupcake pan and place your cupcake wrappers in them. Pour your batter in each one until it is about 1/2 to 3/4 full.
  6. Bake in the oven for approximately 20 mins on 350 degrees. Once you can stick a toothpick in them and it comes out clear, and they are the desired color you want, you are good to take them out. They will not brown as much as regular cupcakes.

Maple Cream Cheese Icing

  1. In a large mixing bowl, add in confectioners sugar, cream cheese, and butter. Using a hand mixer, mix until it is smooth.
  2. Add in the maple Syrup, mix well until incorporated.
  3. Once the cupcakes have cooled, you can add the icing. Add a little extra Maple Syrup on top for added effect.
